Winery Background and History Established in 1928 by Italian immigrants Vittorio and Giuseppina De Bortoli, the winery began in the Riverina region of New South Wales. From humble beginnings crushing Shiraz grapes for local farmers, it has grown into one of Australia’s largest and most successful family-owned wine companies. Now in its fourth generation, the family maintains a commitment to quality and innovation while honoring its heritage. The Sacred Hill range was introduced as a tribute to the family’s philosophy of creating easy-drinking, approachable wines that bring people together, reflecting the inclusive spirit of Australian wine culture.

Producer and Wine Maker The winemaking team is led by Steve Webber, an acclaimed winemaker known for his site-specific approach and commitment to sustainable viticulture. Under his guidance, De Bortoli has moved toward more environmentally friendly practices, including biological farming and water conservation. The winemakers for the Sacred Hill series focus on preserving the primary fruit characteristics of the grapes. By utilizing modern technology and clean fermentation techniques, they ensure that the wine remains fresh, vibrant, and consistent year after year, meeting the high standards expected of a globally recognized family estate.

Vineyards and Micro Climate The fruit is primarily sourced from the Riverina region, characterized by its Mediterranean climate with warm, dry summers and reliable winter rainfall. The flat, fertile plains provide ideal conditions for Semillon and Sauvignon Blanc to reach optimal ripeness. The vineyards benefit from significant sunshine hours, which helps develop the tropical fruit profiles in Sauvignon Blanc, while the cooling evening breezes help maintain the natural acidity in the Semillon. Soil types are varied, ranging from sandy loams to clay, providing a versatile foundation for these varietals to thrive and produce high yields without compromising flavor intensity.

Vinification & Aging Methods The winemaking process focuses on retaining the zesty freshness of the white varietals. Grapes are harvested at night or in the cool of the early morning to prevent oxidation. Upon arrival at the winery, the fruit is gently crushed and pressed. The juice undergoes cold fermentation in temperature-controlled stainless steel tanks using selected yeast strains designed to enhance aromatic lift. To maintain its crisp profile, the wine does not undergo malolactic fermentation and is not aged in oak. It is filtered and bottled early to capture the youthful energy and bright fruit characters typical of the vintage.

Tasting notes This wine displays a brilliant pale straw color with subtle green highlights. The nose is greeted with an aromatic bouquet of passionfruit, guava, and freshly squeezed lime, complemented by a hint of herbaceous nettle. On the palate, it is light-bodied and exceptionally refreshing, showcasing a balanced interplay between the structural weight of Semillon and the zesty acidity of Sauvignon Blanc. Dominant flavors of tropical pineapple and crisp citrus lead to a clean, dry finish. It is a quintessential easy-drinking white that emphasizes purity of fruit and a vibrant, thirst-quenching character.

Food & Wine Pairing The bright acidity and tropical profile make this an excellent companion for a wide range of light dishes. Service Methods and Temperatures To fully appreciate its crisp acidity and aromatic profile, the wine should be served well-chilled. The ideal serving temperature range is between 8°C and 10°C. Using a standard U-shaped white wine glass is recommended, as the narrower bowl helps to focus the delicate floral and citrus aromas toward the nose while maintaining the cool temperature. It is best to keep the bottle in an ice bucket once opened to prevent the wine from warming up, which can cause the acidity to appear flabby. Decanting is not necessary as the wine is designed for immediate enjoyment.

Storage and Aging Potential This wine is crafted for immediate consumption and is not intended for long-term cellaring. Its primary appeal lies in its youthful fruit aromatics and vibrant acidity, which are at their peak within the first 12 to 24 months of release. For storage, keep the bottle in a cool, dark place with a consistent temperature, preferably below 18°C. While the Semillon component could technically allow the wine to evolve slightly over two to three years, the Sauvignon Blanc aromatics will fade, so drinking it fresh is highly recommended to experience the intended style.
