Distillery Background & History
Glen Moray Distillery was established in 1897 in Elgin, at the heart of Scotland’s Speyside region. Originally operating as the West Brewery, the site was converted into a whisky distillery and has since developed a strong reputation for approachable Speyside single malts and innovative cask maturation. Glen Moray has a particularly long association with experimenting with wine and fortified-wine casks, making the Sherry Cask Finish a natural extension of the distillery’s fruity and accessible house style.

Glen Moray's spirit is characteristically light, fruity and malty, allowing the influence of secondary maturation to remain clearly identifiable. The Sherry Cask Finish introduces richer dried-fruit and spice characteristics while preserving the distillery's underlying vanilla, malt and orchard-fruit character.

The distillery sits beside the River Lossie in Elgin, within the Speyside whisky region. Speyside is renowned for elegant, fruit-forward single malts. Glen Moray's relatively delicate house spirit provides an excellent foundation for sherry-cask finishing, as the richer characteristics from fortified-wine casks can develop without completely overpowering the original whisky.

The Whisky
The Elgin Classic Sherry Cask Finish is a richer interpretation of Glen Moray's signature Speyside style. It combines the distillery's characteristic vanilla and fruit flavours with the influence of Oloroso Sherry casks, creating additional layers of dried fruit, spice, nuts and sweetness.

Compared with the standard Elgin Classic and Chardonnay Cask Finish, this expression is richer and more intensely flavoured, while remaining smooth and approachable.

Maturation & Cask Finish
The whisky is initially matured in American oak casks before receiving additional maturation in Oloroso Sherry casks.

The American oak establishes Glen Moray's core vanilla, caramel and fruit character, while the Oloroso casks contribute richer dried-fruit, nutty and spicy flavours.

Tasting Notes

Nose: Sweet vanilla and dried fruit accompanied by cinnamon, toffee, dark berries and gentle oak spice. With time in the glass, richer nutty and caramelised notes emerge.

Palate: Smooth and rounded, showing dried fruit, sweet spice, caramel, vanilla and dark chocolate, supported by gentle oak and malt.

Finish: Warm and lingering, with sweet spice, dried fruit, toasted nuts and subtle oak continuing through the finish.

Food & Whisky Pairing
Excellent with mature cheddar, Manchego, Comté, charcuterie, roasted nuts, dried fruit, dark chocolate and fruitcake. It also works particularly well with desserts containing caramel, figs, raisins or toasted nuts.

For your event's Cheese & Charcuterie Spread Station, this should be one of the strongest pairings in the Glen Moray selection.

Service Methods
For your tasting station, serve approximately 15–20 ml per guest in a Glencairn or tulip-shaped whisky glass.

Serve neat at room temperature initially. Guests can then add a few drops of still water to reveal additional fruit and spice. Ice may be offered upon request, although neat service is preferable for comparative tasting.

For your five-whisky tasting, I recommend:

1. Elgin Classic → 2. Chardonnay Cask Finish → 3. Port Cask Finish → 4. Sherry Cask Finish → 5. Peated

The Sherry Cask Finish should come immediately before the Peated because its richer dried-fruit and spice profile can comfortably follow the Port expression, while the Peated whisky's smoke makes it the natural final whisky.

Storage & Ageing Potential
Store the bottle upright in a cool, dark environment away from direct sunlight and large temperature fluctuations. Whisky does not continue ageing once bottled.

An unopened bottle can remain in excellent condition for decades under proper storage. After opening, keep the closure tightly sealed and minimize excessive exposure to air, particularly once the bottle becomes less than half full.
