Winery Background and History Mollydooker was established in 2005 by Sarah and Sparky Marquis in McLaren Vale, South Australia. The name "Mollydooker" is an affectionate Australian slang term for a left-handed person, reflecting the founders' own southpaw status. The winery rose to fame for its "Marquis Fruit Weight" philosophy and its bold, intensely flavored wines that quickly captured the attention of international critics. Despite a significant loss in 2011 when a large portion of their inventory was destroyed, the winery rebounded through community support and is now a celebrated global brand led by Sarah Marquis, maintaining its status as a premier family-owned estate.

Producer and Wine Maker The winemaking at Mollydooker is overseen by Sarah Marquis, who ensures every vintage adheres to the family's strict quality standards. The team employs a unique viticultural program that focuses on canopy management and precise irrigation to achieve maximum flavor concentration. Sarah and her winemakers are famous for the "Mollydooker Shake," a technique encouraged for their younger wines to release nitrogen used during bottling, which can slightly mute the aromatics. This allows the wine to open up instantly, showcasing the vibrant fruit and velvety texture that have become the hallmark of the Marquis winemaking style.

Vineyards and Micro Climate The fruit for this wine is sourced from the Coppermine Road, Gateway, and Long Gully vineyards in McLaren Vale. The region enjoys a Mediterranean climate, characterized by warm days tempered by cooling afternoon sea breezes from the Gulf St Vincent. This maritime influence is crucial for Cabernet Sauvignon, as it prevents the grapes from overcooking and allows for the development of structural tannins and complex flavor precursors. The soils are predominantly sandy loam over ancient limestone, providing excellent drainage and forcing the vines to struggle, resulting in small, flavor-packed berries with intense color.

Vinification & Aging Methods Harvesting occurs only when the "Marquis Fruit Weight" reaches at least 65%. The grapes are fermented in open-top stainless steel fermenters to extract deep color and firm tannins. Following fermentation, the wine is aged in 100% American oak barrels, comprising a mix of 25% new oak and the remainder in one-to-four-year-old barrels. This aging process lasts for approximately 10 to 12 months, allowing the bold Cabernet fruit to integrate with the sweet spice and vanilla notes of the wood. The wine is bottled with a screw cap to preserve its freshness and is nitrogen-flushed to ensure long-term stability.

Tasting notes This Cabernet Sauvignon displays a deep, dark ruby color with a violet rim. The nose is highly expressive, offering an array of classic varietal aromas including blackcurrant, dark plum, and mint, intertwined with notes of mocha and toasted cigar box. On the palate, it is full-bodied and powerful, yet possesses the signature Mollydooker silkiness. Layers of blackberry and black cherry are balanced by firm yet fine-grained tannins and a refreshing acidity. The finish is persistent and savory, leaving lingering impressions of dark chocolate, spice, and a touch of earthiness that adds complexity.

Service Methods and Temperatures To fully unlock the aromatic potential of this Cabernet, the "Mollydooker Shake" is highly recommended: pour out a small amount, recap the bottle, and shake vigorously before letting it settle for a few minutes. The wine should be served at a steady temperature between 16°C and 18°C. Serving it in a large-bowled Bordeaux glass is ideal, as it provides enough surface area for the wine to aerate and directs the complex dark fruit and oak-driven aromas to the nose. While decanting is an alternative to the "shake," the latter is the producer’s preferred method for immediate aeration.

Storage and Aging Potential While The Maitre D' is crafted to be approachable and fruit-forward upon release, its solid tannin structure and high concentration allow it to age gracefully. When stored in a cool, dark cellar at a consistent 14°C to 16°C, the wine will continue to develop for the next 5 to 8 years. Over time, the primary blackcurrant flavors will evolve into more complex secondary characters such as leather, dried herbs, and tobacco. However, many fans of the style prefer to drink it within the first 3 to 4 years to enjoy the explosive "Fruit Weight" and vibrant energy.
