Winery Background and History Oyster Bay Wines was established by Delegat Group in Marlborough, New Zealand, a pioneering house that helped define the modern style of Marlborough Sauvignon Blanc with bold, expressive aromatics and crisp acidity. Since its inception the winery has focused on crafting wines that reflect the unique terroir of New Zealand’s cool climate viticulture, emphasizing fruit purity, balance and refreshing energy. Oyster Bay became internationally recognized for its consistent quality and approachability, contributing significantly to Marlborough’s global reputation as a premier Sauvignon Blanc region.


Producer and Winemaker Oyster Bay Marlborough Sauvignon Blanc is produced by the winemaking team at Oyster Bay with a clear philosophy of capturing the region’s distinctive characteristics in every vintage. The team treats each vineyard block and parcel individually, harvesting at optimum maturity and gently pressing to preserve varietal intensity. Fermentation is slow and temperature-controlled to retain fruit vibrancy and aromatic complexity. Bottling occurs soon after winemaking to lock in fresh, expressive flavors. This approach ensures wines that are elegant, assertive and unmistakably regional. 


Vineyards and Micro Climate Grapes are sourced from Marlborough’s prime vineyards, including Wairau and Awatere Valleys, where a cool maritime climate with warm sunny days and clear, cool nights enables slow, even ripening while maintaining bright natural acidity. Soils are predominantly free-draining alluvial gravels and shallow sandy loams, encouraging deep root systems and strong varietal expression. These conditions deliver intense fruit character, crisp freshness and minerality central to Marlborough Sauvignon Blanc’s signature style. 


Vinification & Aging Methods After harvest the fruit is crushed, gently pressed and the juice clarified. A long, slow fermentation in temperature-controlled stainless steel tanks (typically around 12–14 °C) preserves the fruit’s tropical and citrus aromatics. There is minimal oak influence; the wine is fermented and aged on fine lees briefly to enhance texture and complexity before bottling young to maintain freshness. 


Tasting Notes The 2025 Sauvignon Blanc displays a pale straw-green hue with brilliant clarity. The nose is vibrant with assertive passionfruit, tropical fruit, citrus zest and crisp grapefruit characters. On the palate it is fresh and energetic, balancing zesty acidity with concentrated tropical fruit and citrus flavors, culminating in a clean, refreshing finish that is elegant and lively. 


Food and Wine Pairing Pair this Sauvignon Blanc with fresh seafood such as oysters, prawns, ceviche and shellfish, as well as grilled fish and light poultry dishes. It also complements Asian cuisine, herb salads, goat cheese, citrus-based appetizers and light vegetarian fare. Its high acidity and fruit intensity make it excellent with zesty and herbaceous flavors. 


Service Methods and Temperatures Serve chilled at 7–10 °C in a white wine glass to accentuate its aromatic brightness and crisp acidity. Avoid serving too cold as extreme chill can suppress expressive fruit character; allow a few minutes in the glass after pouring for optimal aromatic development.


Storage and Aging Potential This wine is designed for youthful consumption to highlight its fresh fruit and vibrant acidity. Store bottles in a cool, dark place and enjoy within 1–3 years of release for peak vibrancy. It is not a wine intended for long-term cellaring as its primary appeal lies in youthful expression.
